The municipality of Ixtlán de Juarez is situated in the Mexican state of Oaxaca and is home to the community of Santo Domingo Cacalotepec. The community has been producing coffee for generations and in 2003, they formed the La Lagunilla Rural Production Society, LLC (known as La Lagunilla S.P.R. de R.L. in Spanish). Today, La Lagunilla comprises of 40 members who cultivate 131 hectares of clay soils in a forested conservation area. This coffee is certified as organic. The coffee beans are depulped on the same day they are harvested, fermented for 16 hours, and then dried.
