This sundried, natural-processed coffee is juicy and sweet with the fruit-forward taste characteristic of Ethiopia's Guji region. It has strong opening strawberry notes with a comforting finish of milk chocolate and caramel.
Guji's high-elevation Hambela district has a dense population of smallholder farmers growing indigenous and heirloom coffees. They transport their harvests to central processing stations in the area, most of which are independently owned and operated. These processing stations meticulously sort through the cherries, dry them in the sun for two to three weeks, and hull them. The hulled beans are transported to Addis Ababa, Ethiopia's capital, where they are dry-milled and sorted by hand for export.
