Rwanda - Rulindo Murambi - Washed

This lot of Rulindo Murambi was grown by more than 170 family owned farms in Rwanda's Gatsibo district. Smallholder farmers bring their cherries to the centralized Murambi washing station where they are processed with safer, more modernized machinery than individual farmers are able to access. Murambi begins the processing with the quality control method of hand sorting and floating the cherries in water. They are then depulped and fermented. The fermentation process is halted by a 18-24 hour freshwater soak, after which the parchment is washed for a second time. Washing station workers perform a final round of quality control by meticulously hand sorting the parchment on pre-drying tables while it is gently dried to the touch. After removing any parchment with defects from the lot, they transfer it to fully exposed drying tables for 14-21 days. 

We love this coffee's bright opening plum notes, which meld into smooth dark chocolate and the rich sweetness of brown sugar. Brew it as a pourover for more prominent fruit notes or try it as espresso to bring out its complex chocolate flavor!
