A Legacy of Excellence
Pedro Turcios, a third-generation coffee producer, continues a rich family tradition of coffee cultivation, guided by the wisdom of his grandmother and mother. In their honor, Pedro named his farm Maria Bonita, where he meticulously experiments with coffee varieties and processing methods to refine his craft and improve quality each season.
Pedro’s commitment to sustainability is central to his work. By incorporating eco-friendly farming practices, he has improved soil fertility, increased production yields, and achieved exceptional cup quality. “Coffee produced at Finca Maria Bonita carries with it our efforts and commitment to our community,” Pedro shares.
COMSA: Collaborative Innovation
Pedro’s success is deeply intertwined with his active role in Café Orgánico Marcala (COMSA), a cooperative that has revolutionized coffee farming in Honduras since 2001. COMSA began with 69 farmers transitioning to organic farming and has since grown to over 1,200 members. Its innovative methods, such as organic soil management using natural microorganisms, have significantly enhanced coffee quality and environmental sustainability.
COMSA is more than just a cooperative—it’s a hub for education and sustainable development. Its "Diplomado Orgánico" program provides farmers with training in regenerative agriculture, fostering a deeper connection between farming practices and ecological stewardship. The cooperative’s work extends beyond agriculture to encompass social impact, improving family relationships, and creating economic opportunities that keep farming communities thriving.
Pedro embodies COMSA’s mission of innovation and community development. His dedication to advancing specialty coffee reflects the shared values of sustainability and excellence that define COMSA.
The Natural Process
The natural processing method at Finca Maria Bonita enhances the coffee’s natural fruitiness, producing a dynamic and complex flavor profile. After careful handpicking, coffee cherries are dried with the fruit intact, allowing the sugars to ferment and infuse the beans with vibrant fruity notes. This meticulous method results in a cup bursting with strawberry and plum flavors, balanced by a rich dark chocolate finish.
Tasting Notes
Pedros Turcios is a bold, flavorful coffee that highlights the best of natural processing. With its natural sweetness, lively acidity, and smooth finish, it shines in pour-over brewing, revealing vibrant fruit layers. Enjoy it black for a bright, refreshing cup, or add milk to enhance its chocolatey richness.
Brewing Tips
For an exceptional cup, we recommend a 1:15 coffee-to-water ratio to bring out the coffee’s fruity sweetness and creamy body. Pedros Turcios also excels as a French press or drip brew, offering a full-bodied experience any time of day.
