We’re excited to introduce Biloya, a vibrant anaerobic natural coffee from the Gedeb region of Ethiopia. This special lot is fruity and creamy, with tasting notes of raspberry, strawberry, and a rich, sweet body.
About Biloya & the Gedeo Zone
Biloya is located in Kochere, one of the largest districts in Ethiopia’s Gedeo Zone, the highland region famous for producing some of the most sought-after coffees in the world. This area, often labeled “Yirgacheffe”, has long been a benchmark for complexity and quality in Ethiopian coffee.
The farmers contributing to this lot cultivate coffee on small plots averaging just 2 hectares, alongside avocado, sugarcane, and enset—a traditional staple crop. Their dedication to meticulous harvesting and processing results in the distinct flavors that make Biloya stand out.
Processing: Anaerobic Natural
Anaerobic processing is still rare in Ethiopia, but when done well, it creates incredibly dynamic flavors. This coffee was processed at the Biloya Station, operated by Tracon Coffee, an independent exporter managing multiple stations in the Gedeo Zone.
The cherries were carefully hand-sorted for ripeness before being fermented whole in oxygen-deprived tanks for 24 hours. This controlled environment enhances the coffee’s fruit-forward character and creamy body. After fermentation, the cherries were dried on raised beds for about three weeks, regularly rotated for consistency before final milling and export.

Biloya delivers a juicy, winey sweetness, bursting with ripe raspberry and strawberry flavors. Its creamy body and lingering sweetness make it a fun choice for both filter and espresso. Try it as a pour-over to highlight its bright fruit notes or dial it in as an espresso for a rich, jammy shot.
