We’re excited to introduce our latest single-origin coffee: Gladys Rivera, grown in the highlands of La Paz, Honduras. This lot brings bold flavors of black cherry, grape, and cacao with a syrupy body, making it a standout for those who enjoy rich, fruit-forward coffees.

About the Producer

Gladys Ondina Rivera is part of COMSA (Café Orgánico Marcala S.A.), a cooperative known for its commitment to organic farming and sustainable practices. COMSA’s philosophy, called Finca Humana, focuses on harmonizing agriculture with the well-being of both people and the environment. Through this program, farmers like Gladys receive training on organic cultivation, soil health, and selective harvesting to maximize coffee quality.

Gladys applies these principles on her farm, Finca La Natura, where she meticulously harvests cherries at peak ripeness using brix measurements to ensure optimal sugar content. The cherries are then sorted, macerated for 24 hours, and dried on raised beds for up to 20 days, a process that enhances the coffee’s complexity and depth. 

At COMSA’s dry-mill facility, the coffee undergoes strict quality control before export. The organization’s cupping lab and Q graders ensure traceability and consistency, helping producers like Gladys earn higher premiums for their coffee.

About the Region

Marcala is one of Honduras’ most renowned coffee-growing regions and holds a protected designation of origin, ensuring its coffees meet strict quality standards. Grown at 1,550 masl in clay mineral soils, this coffee benefits from Marcala’s stable climate, rich soil, and long-standing coffee traditions.

This natural-processed coffee is rich and fruit-forward, with notes of black cherry, grape, and cacao, complemented by a syrupy body. Its sweetness and depth make for a complex yet approachable cup.

Brewing Recommendations

To highlight the coffee’s depth and fruitiness, we recommend brewing it as a pour-over:

  • Coffee-to-water ratio: 1:16
  • Grind size: Medium-coarse
  • Water temperature: 200°F (93°C)
