This is our first year working with Jose Domingo Ullune and his farm Sierra Alta. As well as Coffee Jose also produces sugar cane and is a member of the Asorcafe cooperative which is headquartered in Pedregal, a village in the municipality of Inza, where the quality laboratory is located and a special storage place to collect high quality coffees. This small cooperative is a mix of small holder producers whose average farm size is 1.8 to 2 hectares of coffee, and the plantations are anywhere from 1500 to 2100 meters above sea level. Mainly Caturra, bourbon, pink bourbon, and Tabi are the varieties grown in the region. Most farmers, including Jose make fully washed coffees, fermenting it for around 20-40 hours, then washing and sun drying it on raised beds. A few producers are now starting honey and natural processes.
We always have loved coffees from Cauca, and Jose's lot is no exception. We are happy to bring to you this coffee for the first time and hope you enjoy the vibrant acidity and sweet profile that this coffee has.
