The Santa Cruz Ozolotepec region, nestled in the Sierra Madre del Sur mountains, offers ideal growing conditions for this remarkable lot. The area’s volcanic clay mineral soil and high elevation, ranging from 900 to 1250 meters above sea level, contribute to the unique quality and flavor profile of the coffee.
Upon arrival at the processing facility, the coffee cherries are washed and then meticulously sorted to ensure only the best beans are selected. The cherries undergo the fully washed process, where they are depulped, fermented, washed, and dried both in the sun and mechanical dryers (guardiolas). This careful process enhances the coffee's clean flavors and bright acidity, making it stand out in any cup.
